Maple OATMEAL Cookies
PREP TIME: 15 mins

SERVING: 12 cookies
INGREDIENTS
2 cups (500 ml) quick oats
3/4 cup (175 ml) unbleached all-purpose flour
1/2 cup (125 ml) chopped pecans
1/2 tsp (2 ml) baking soda
1/4 tsp (1 ml) salt
1/2 cup (125 ml) unsalted butter, softened
1/2 cup (125 ml) brown sugar
1/2 cup (125 ml) Fulton's Organic Maple Syrup
1 egg
3 Tbsp (45 ml) Fulton's Granulated Maple Sugar
INSTRUCTIONS
With the rack in the middle position, preheat the oven to 350 F (180C). Line two baking sheets with parchment.
In a bowl, combine the oats, flour, pecans, baking soda and salt. In another bowl, beat the butter and brown sugar until light and smooth. Add the Fulton's Organic Maple Syrup and egg and mix until well combined. Stir in the dry ingredients with a wooden spoon.

Using a 1/3 up (75ml) ice cream scoop, portion the cookies into 12 balls. Place the dough balls on a cookie sheet and flatten with a fork until they are 3/4 inch (2 cm) thick. Sprinkle with Fulton's Granulated Maple Sugar.
Bake one sheet at a time for 12 minutes or until cookies are golden but still soft in the centre. Let cool on a pan. Makes 12 cookies.
