Maple-Apple Chicken Burgers

INGREDIENTS
Sauce
1/4 c (50 ml) mayonnaise
2 tbsp (25 ml) Fulton's Organic Maple Syrup
1 tbsp (15 ml) Fulton’s Maple Mustard
Burgers
2 tbsp (25 ml) olive oil
1 onion, sliced
1 gala apple, peeled, cored & finely chopped
1 lb (500 g) ground chicken
2 tbsp (25 ml) Fulton's Organic Maple Syrup
1 tsp (5 ml) Italian seasoning
1 egg
1/2 tsp (2 ml) salt
1/4 tsp (1 ml) pepper
6 tbsp (90 ml) olive oil, divided
6 hamburger buns, split
INSTRUCTIONS
Make the sauce by whisking all ingredients in a small bowl. Set aside.
Heat 2 tbsp olive oil in a skillet over medium heat; cook & stir onion and half of chopped apple in hot oil until soft (5 - 7 minutes). Set aside.
Mix remaining uncooked apple, ground chicken, 2 tbsp maple syrup, Italian seasoning, egg, salt & pepper together in bowl. Shape the burger mixture into 6 balls; the mixture will be loose.
Heat 3 tbsp olive oil in a large skillet over medium heat. Place balls into the hot oil and flatten with the back of a large spoon to create patties. Cook until slightly brown on one side, flip, then cook other side until brown and no longer pink on the inside (about 10 minutes) in total.
To assemble, place the chicken burgers on buns and top with the cooked apple and onions. Pour some of the sauce over each burger and top with bun lids.
