Curried Corn

TOTAL TIME: 30 mins

SERVING: 4-6

 

INGREDIENTS

 

2 tbsp Vegetable oil or butter
1 cup Diced onion
2 to 3 tsp Fulton's Maple Curry Spice
3 cups Fresh or Frozen corn
1 3/4 cup coconut milk (14 oz can)
1 tbsp Fresh lime juice
Salt & Pepper to taste
Chopped cilantro to garnish

 

INSTRUCTIONS

 

In a covered saucepan warm the oil or butter on medium heat.

 

Add onion and sauté for 3 min.

 

Add curry spice and sauté, stir well, until spices have darkened and the onions are lightly golden and soft.

 

Stir in corn, cover and heat for about 3 min.

 

Pour in coconut milk, and cover. Heat thoroughly but do not let boil.

 

When corn is hot and tender, remove from heat and stir in lime juice.

 

Sprinkle with cilantro and serve.
